How To Make Egg Bites Recipe

Ingredients:
Cooking Spray
¼ stick butter
5 tiny tricolor baby potatoes, thinly sliced
Ten tiny eggs.
One small tomato, coarsely sliced
1 small yellow bell pepper, coarsely chopped
¼ cup chopped ham
1/2 cup fresh spinach.
¼ cup chopped white onion
1 piece of mozzarella cheese, divided into twelve cubes
Instructions:
Preheat the oven to 350 degrees Fahrenheit/175 degrees Celsius. Coat a 12-cup muffin tray with nonstick cooking spray.
Put a thin layer of potato slices in the bottom of each muffin cup. Put a little butter on top.
Bake in a preheated oven for 5 minutes.
Combine eggs, bell peppers, tomatoes, spinach, ham, and onions in a large mixing bowl. Spoon the egg mixture over the heated potatoes. Top each muffin cup with a cube of mozzarella.
